
While you may feel no stranger to neither French consommé nor rice noodle, have you thought of combining the both? Is it a gimmick or singular originality? The case below, obviously the latter.

Dubbed CONSOMMÉ, the innovative noodle bar which is a sibling of the one Michelin-starred Cantonese terroir-inspired modern French restaurant Rêver is engaged in redefining Cantonese noodle soup culture with classic French consommé.
Taking Rêver as backing, it makes the enjoyment of French cuisine more accessible by fitting in local dining culture.

This novel dining concept started from a French onion soup dish at Rêver in 2021. Struck with a sudden inspiration from a phrase like “I want to have a nice noodle soup”, the co-founder Edward Suen came up with this idea.

Some reasons are at the back, including France and the Guangdong region where share a very much similar appreciation to clear soup that is technical, flavorful, nourishing and clean, exquisite double-boiled soup being requisite to Cantonese noodle soup, and a build-up of large portfolio of French consommé infused with local cultural heritage at Rêver.

So, CONSOMMÉ was born out of all these elements that were well-grounded in practice. Launched in April this year, it now has two easy-to-access locations in southeast China’s Guangzhou city – Taikoo Hui, K11.

At this stage six signature consommé selections to offer, that is, Boeuf (beef), poulet (chicken), canard (duck), poisson (fish), champignon (mushroom), tomate (tomato), served with which are four kinds of Chinese rice noodle – Yunnan thick rice noodle, Chiu Chow kuey teow, Hakka thin rice noodle, Konjac noodle. Rice noodle allows consommé to reach its maximum intensity of taste and consistency.

Corresponding to its innovative spirit and contemporary French lifestyle, the interior design – developed by China’s architectural firm Atelier XY – is a pivot on modern, simple, bright, lively, and open. It is a finalist of Restaurant and Bar Design Awards 2024.
