SCENA DI ANGELO: Savour the Mediterranean flavors by the sea

Of late, Chef Angelo Aglianó splits his time between Hong Kong and Shanghai. He’s the director of Hong Kong’s one-Michelin-starred TOSCA DI ANGELO, and he’s also in charge of SCENA DI ANGELO in Shanghai. 

Chef Aglianó, a native of Sicilia sharpened his teeth from an extensive range of prestigious establishments encompassing the expansion of L’Atelier de Joël Robuchon’s legacy in Monaco, Taipei and Hong Kong. As soon as he took the reins of TOSCA DI ANGELO at the beginning of 2019, the Italian restaurant championed one Michelin star. 

Maintaining his consistent philosophy of translating Italian original tastes and traditional recipes from his childhood in a simple and elegant approach, Chef Aglianó branches out to Shanghai and heads up SCENA DI ANGELO with focus on Italian classics complemented by Mediterranean flavors. 

Uniquely though, infusing his Sicilia heritage, excellent seafood cooking for which he was born in a fishing family, with Shanghai local ingredients, adds a touch of personal style. 

This summer in the Ritz-Carlton Pudong, the sensory voyage through the Mediterranean Sea settles at the sun-drenched coasts and rolling waves. Paired with Italian wines from the north to the south is an appealing thought, making it more fascinating. 

It kicks off with lobster carpaccio with green asparagus and caviar. The fresh and luscious Boston lobster, dresses with a Sicilian sauce made from caper, celery, fennel and preserved lemon, and goes with Ca’del Bosco Cuvee Prestige Franciacorta DOCG which is characterized by grace and finesse with floral nuances and citrus fruits, developing a gentle, clear and natural breeze of the Mediterranean Sea to touch your senses while tickling taste buds. 

Sicilian busiate with sea urchin and wasabi paired with Planeta Chardonnay Sicilia Menfi DOC, boosts a pleasing contrast of creaminess, crispness, rich aromas of apricot, apple and lime, complete with a sunny Sicilian twist, paying the way for a round and rich flavor in the next dish – scampi with white asparagus veloute, bottarga and sun-dried tomatoes. 

Lamb chop served with traditional Moroccan-style stewed eggplant, roasted eggplant purée enhanced by rosemary oil, oregano, and Greek yogurt, coupled with Mussell Amarone Della Valpolicella DOCG from Veneto, is delightfully mellow pepped with a wisp of dried fruits, sweet berries, and spices.

Ending on a sweet finish is the raspberry vanilla panacotta with yogurt ice cream. A velvety palate with enticing flavors and aromas from raspberry and others – including almond, apricot and honey which come out from the dessert wine Ruffino Serelle Vin Santo del Chianti. 

Located on the 52nd floor at the Ritz-Carlton Shanghai Pudong, it offers a vast panorama of the city’s financial hub either for lunch or dinner. Further, a design with an open kitchen and chef’s table while tables are screened off from others for privacy is thoughtful and considerable.
